Apple Cinnamon Irish Soda Bread
I love making homemade bread. The smell of fresh bread baking in the oven is second to none and eating a thick slice of fresh, warm bread from the oven with butter melting on top is heaven. Somedays though, waiting for a yeast dough to rise and be ready in time for growling tummies just isn’t realistic. When we’re craving fresh bread but running on little time or energy, Irish Soda bread is the best option. Irish Soda bread doesn’t require any time to rise but really hits the spot when you have a hankering for some carbs! This recipe uses a mix of whole wheat and white all purpose flour. I find that when I make it completely of whole wheat flour it comes a little too dense and dry despite how much liquid I add to the recipe. I like to play around with flavours as well, although plain Irish Soda bread is delicious, my all time favourite flavour combination is apples and cinnamon, so I decided to add those in here and I was not disappointed. This bread comes together quickly and doesn’t require too much time in the oven either. Within an hour, you’ll have bread ready to enjoy. This recipe is definitely one of our fave go to bread recipes, so simple and quick to prepare and of course, delicious too.
For the littlest eaters, fresh is probably the easiest for them to enjoy or toasted, just be sure to spread any toppings on very sparingly, especially in the case with nut butters as they can pose a choking risk if spread too thick. Break bread into small pieces for babies and toddlers to feed themselves or cut into sticks.
Apple Cinnamon Irish Soda Bread
Makes 1 large loaf
Dry Ingredients:
2 cups + 2 tbsp whole wheat flour
2 cups all purpose flour
1 tbsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp salt
2 tsp cinnamon
Wet ingredients:
1 cup buttermilk (can also use non dairy milk with a splash of lemon juice or vinegar)
1/3 cup applesauce, unsweetened
1 egg
1/4 cup oil or melted butter
Add ins:
2 tbsp hemp seeds
1 apple, chopped, skin left on
Directions:
Preheat oven to 375 degrees F and line baking sheet with parchment
Combine dry ingredients into a large bowl
Mix wet ingredients together in a separate bowl then add to the dry ingredients. Using a wooden spoon, combing wet and dry ingredients, add in chopped apples and continue to mix until a shaggy dough forms.
Remove dough from bowl and knead on floured counter top until smooth
Place on parchment lined baking sheet, using a serrated knife, cut an ‘X’ into the top of the loaf, going about 1/2” deep
Brush with 2 tbsp milk and sprinkle with hemp seeds
Bake for 40 minutes or until golden brown and loaf sounds hollow when the bottom is tapped
Allow to cool before slicing
