Apple Cinnamon Oatmeal Cookies

Cookies are always hit around here, no surprise there! Although I have no problem with serving the real deal, I also like being able to put a healthier spin on a cookie recipe. To make cookies healthier, I like to bump up the fibre, add in some fruit and cut down on the sugar. We love the apple cinnamon combo in this house so I wanted to come up with a cookie recipe that incorporated those flavours and these fit the bill perfectly. They are so delicious and really hit the spot when a cookie craving hits. I serve these for snack with cheese, yogurt or a glass of milk and a fruit on the side depending on how big appetites are. I am also totally comfy with offering these for breakfast too!

Apple Cinnamon Oatmeal Cookies

Makes 15 cookies

Dry Ingredients

1 cup whole wheat flour

3/4 cup quick oats

1/3 cup ground flax

1 tsp baking soda

2 tsp cinnamon

pinch of salt

Wet ingredients

1/2 cup butter

1/3 cup brown sugar

1 egg

1 tsp vanilla

1 apple, small dice

Directions:

  • Preheat oven to 350 degrees and line a baking sheet with parchment

  • Cream butter and sugar in in a medium sized bowl, add in egg and vanilla

  • In a separate bowl, combine dry ingredients

  • Add dry ingredients to wet and stir to combine, fold in chopped apple

  • Using a tablespoon, portion cookie dough onto parchment lined baking sheet

  • Bake for 15 minutes
