Apple, Rhubarb and Strawberry Crisp

Fruit crisp is one of my favourite things to make all year round. It is so versatile and I can showcase seasonal fruits. We love it as breakfast, dessert or snack. We change up the toppings, yogurt, ice cream or nut butter. Right now we have rhubarb growing in the garden and I was able to get some local strawberries too, so I was excited to use both in a crisp. I didn't have quite enough of these two ingredients to make a decent portion to feed my crew so I decided to add in some apples to fill it out. This crisp did not disappoint, the kids had it for snack yesterday and almost polished off the whole tray, luckily there was still a little bit left for me.

Apple Rhubarb Strawberry Crisp

Makes ~8 servings

Ingredients:

FRUIT

4 golden delicious apples

1 1/2 cup strawberries, quartered

2 stalks rhubarb, diced

2 tsp cinnamon

1 tbsp flour

1/4 cup brown sugar

TOPPING

2 cups quick cooking oats

2 tbsp brown sugar

1 tsp cinnamon

1/4 cup butter

Directions:

  • Preheat oven to 350 degrees

  • Combine apples, rhubarb and strawberries in a large bowl, toss with flour, cinnamon and sugar and pour into 9x13” baking dish.

  • Combine topping ingredients in the same bowl, cut in butter, then sprinkle on top of the fruit, pressing down gently

  • Bake for 45-50 minutes, or until fruit is tender
