Banana Blueberry Breakfast Cookies

These cookies are great for a breakfast treat. They are packed with high fibre ingredients like whole grain flour, oats, chia seeds and blueberries. These cookies also contain some protein from the almonds and seeds, which are also added for flavour and texture. Great as a grab and go breakfast. Pair with a fruit or yogurt on the side and you’ve got a delicious, filling and nutritious meal to start the day.

Banana Blueberry Breakfast Cookies

Makes 15 cookies

Wet ingredients:

1 banana, ripe, mashed

1/4 cup vegetable oil

1 egg

1 tsp vanilla

3/4 cup blueberries, fresh or frozen

Dry Ingredients:

1 cup whole wheat flour

3/4 cup quick oats

1/3 cup brown sugar

2 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

pinch of salt

1 tbsp chia seeds

1 tbsp hemp seeds

1/4 cup slivered almonds

Directions:

  • Preheat oven to 350 degrees F and line baking sheet with parchment

  • Combine wet ingredients in a large bowl with the exception of blueberries

  • Add in all dry ingredients to the bowl, stir to combine

  • Fold in blueberries

  • Using a tablespoon, place cookie dough on the baking sheet being sure to space cookies apart

  • Bake for 18-20 minutes

  • Allow to cool before serving
