Banana Berry Frozen Yogurt Bark

Frozen yogurt bark!  Genius!  This idea was born out of my need to use up some yogurt and berries before they were past their prime and when all our popsicle molds were already in use.  The method of preparing this frozen treat is identical to making popsicles except you pour the mixture onto a prepared baking sheet rather than into individual molds.  The end result is tasty, refreshing and full of great nutrients! These frozen yogurt squares are a great summer treat.  They are a source of calcium and full of vitamins, minerals and antioxidants from the berries.  Feel free to add in any other seasonal fruit to switch up the flavour.

Banana Berry Frozen Yogurt Bark

Makes 16 Squares

½ cup Plain Greek Yogurt

½ cup Vanilla Greek Yogurt

½ cup raspberries, fresh or frozen

½ cup blueberries, fresh or frozen

1 banana, sliced into rounds

2 tbsp unsweetened coconut, shredded

Directions:

  • Prepare baking sheet with parchment paper

  • Place all ingredients into blender and blend until smooth

  • Pour onto baking sheet, top with banana slices and sprinkle with shredded coconut

  • Freeze for 4-5hr and break into pieces

  • Serve immediately.  Any leftovers can be stored in a sealed freezer bag or container for up to 3 months
