Beet and Pear Mini Muffins for Baby

Beets were next on my list of foods to try with my littlest one. She’s still moving slowly with solids. She seems to be ok with textures but is struggling a little bit with some flavours, especially the sweet ones (go figure!). But she is still learning and I am enjoying watching her learn about different foods. I wondered how beets would go, yes, they are sweet, but have such an earthy flavour which kind of balances out the sweet. I steamed some for her last night and she gobbled them up! I was so surprised but really pleased. I decided to use the leftovers to make her some mini muffins using iron fortified infant cereal, pears, chia seeds and whole wheat flour.

Beet and Pear Mini Muffins for Baby

Makes 24 mini muffins

Dry Ingredients:

3/4 cup whole wheat flour

3/4 cup Iron fortified infant cereal

1 tsp baking powder

1/2 tsp baking soda

pinch of salt

1/2 tsp cinnamon

2 tbsp chia seeds

Wet Ingredients:

2 tbsp oil

2 tbsp tahini (or other nut or seed butter)

1 egg

1 pear, ripe

1 beet, steamed

2 tbsp milk (any kind)

Directions:

  • Preheat oven to 350 degrees and grease mini muffin tin

  • Combine all ingredients into a food processor or blender, blend until smooth

  • Portion out into muffin tin

  • Bake for 15-18 minutes or until a tester comes out clean
