Berry Smoothie with Silken Tofu

Smoothies are a really quick and easy treat. Coming up with the combinations to blend together is fun and the options are truly endless. We often use a base of yogurt and fruit to start our smoothies and then decide on our add ins like unsweetened cocoa powder, almond or peanut butter, coconut milk or even silken tofu to increase the protein content. The all time favourite here is banana, cocoa and peanut butter. Usually we use frozen fruit and the kiddos enjoy as a quick breakfast, snack or after dinner treat. Any leftovers in the blender get poured into a popsicle mould to be enjoyed another day.

In this version we’ve used frozen mixed berries, unsweetened almond milk, plain Greek yogurt, plain silken tofu and banana. The berries offer nutrients such as vitamins, minerals and antioxidants and tons of flavour too, of course. The Greek yogurt and tofu bump up the protein and calcium content while the banana adds in some sweetness and nutrition too.

Berry Smoothie

Makes 4 smoothies

1/4 cup almond milk, unsweetened

1/2 cup silken tofu, plain

1/4 cup Greek yogurt, plain

1/2 cup frozen raspberries

1/2 cup frozen blueberries

1 banana

Directions:

  • Combine all ingredients in blender or food processor

  • Blend until smooth

  • Enjoy as a smoothie or pour into popsicle moulds and freeze for later
