Chocolate Cashew Energy Balls
These energy balls are a great snack. Wholegrains, healthy fats and lightly sweetened. A perfect recipe for kids to be involved in making. They get their hands dirty and enjoy eating the fruits of their labour. Can be made with any variety of nut or seed butter based on tastes or allergies.
Chocolate Cashew Energy Balls
Makes 20
Ingredients:
1/2 cup cashew butter
1/3 cup honey or maple syrup
1 tsp vanilla
1 1/4 cup old fashioned oats
1 tbsp unsweetened cocoa powder
2 tbsp hemp seeds
1/4 cup mini chocolate chips or dried cranberries
Directions:
In a medium bowl, combine cashew butter, honey (or maple syrup) and vanilla, mix until smooth
Add in oats, cocoa powder, hemp seeds and chocolate chips or cranberries
Stir together until all ingredients are incorporated
Using a tablespoon measure out oat mixture and with damp hands, roll into a ball. Place on a parchment lined baking sheet and chill for 4-6 hours before serving
