High Iron Banana Pumpkin Cookies

These high iron cookies are a great snack or breakfast for babies and toddlers. They are naturally sweet from the banana and pumpkin. These cookies are soft and easy for babies and toddlers to hold on their own and eat. Serve these up with a source of vitamin C to increase absorption of the iron. They may not be the nicest looking cookies but they are yummy and deliver on a nutrient little ones need!

High Iron Banana Pumpkin Cookies

Makes 16

Dry ingredients

1 cup Iron fortified infant cereal

1/2 cup almond flour

2 tsp baking powder

1 tsp baking soda

pinch of salt

1 tsp cinnamon

1 tsp pumpkin pie spice

Wet ingredients

1 egg

1 cup pumpkin puree (unsweetened)

1/2 banana, mashed

1 tsp vanilla

Directions:

  • Preheat oven to 350 degrees and line a baking sheet with parchment

  • Combine dry ingredients in a small bowl and set aside

  • Combine wet ingredients in a larger bowl

  • Add dry ingredients to wet ingredients and stir to combine

  • Using a tablespoon to measure out cookie dough, place cookies evenly spaced on baking sheet

  • Bake for 15 minutes

  • Cool before serving
