Oat Crumble Bars with Cranberry Chia Jam

Another holiday recipe using cranberries! I’ve always loved oat crumble bars. The buttery oats paired with a delicious jam or fruit centre. Definitely one of my faves. I have been dreaming up this recipe for a while and really wanted to fit cranberries in to make this a Christmas kind of treat. This recipe is not only yummy but also full of great ingredients. This is an easy peasy recipe to put together and the ingredient list is short. Made with high fibre oats, maple syrup, almond butter and almond flour. Great for breakfast or snack. Also really versatile, instead of cranberry chia jam, you could add cooked apples or peaches or dates! There’s only one square left and I’m saving it for me, another batch will be made again soon!

Oat Crumble Bars with Cranberry Chia Jam

Makes 12 squares

Dry ingredients

1 cup quick oats

2/3 cup almond flour

Wet ingredients

1/2 cup natural almond butter

1/4 cup maple syrup

4 tbsp butter

1 tsp vanilla

Filling

1 1/2 cups Cranberry Chia Jam (recipe up on the blog)

Directions:

  • Preheat oven to 350 degrees and line 8x8” baking dish with parchment

  • Heat almond butter, maple syrup and butter in the microwave or on the stove top. Remove from heat once butter is melted. Stir in vanilla

  • Combine oats and almond flour in a small bowl, pour almond butter mixture over oats and stir until combined.

  • Place half of the mixture into the baking dish and press down to make the bottom layer

  • Spread chia jam

  • Sprinkle with remaining oat and almond butter crumble

  • Bake for ~30 minutes

  • Allow to cool completely before cutting into squares (I found it was best to cool for 1-2 hours in the refrigerator before cutting)
