Spinach, Corn and Cheddar Muffins

These muffins are a great addition to any meal or all on their own as a snack. We love them as a side to a warm bowl of soup. The kids really enjoyed them warm out of the oven with a bit of butter melting on top. These muffins are savoury and delicious. The combination of spinach, corn flour and cheese is perfect. Made of whole grains and veggies makes these muffins high in fibre with a hit of cheese for flavour and nutrients such as calcium and protein. They are quick and easy to whip up making them perfect for getting a meal or snack on the table for hungry little ones. Try ‘em out! Hope you enjoy them as much as we do.

Spinach, Corn and Cheddar Muffins

Makes 12

Dry ingredients

1 1/4 cup whole wheat flour

3/4 cup cornmeal

2 tbsp sugar

1 tbsp baking powder

Wet ingredients

1 egg

1 cup milk

1/2 cup ricotta or cottage cheese

1/3 cup canola oil

1/2 cup spinach, chopped, frozen

1/2 cup cheddar cheese, shredded

Directions:

  • Preheat oven to 350 degrees

  • Prepare muffin tray by greasing each cup or adding muffin liners

  • In a medium bowl, mix together dry ingredients

  • In a large bowl, mix together wet ingredients, except spinach and cheese

  • Add dry ingredients to wet ingredients, stir to combine

  • Fold in spinach and cheese

  • Fill muffin cups and bake for ~ 20 minutes or until a tester comes out clean
