Strawberry Coconut Donuts! Ok, so they aren’t ‘real’ donuts because they are baked not fried but they still taste great! We threw a bunch of things into a bowl, folded in some strawberries and hoped for the best. That is the best kind of recipe in my books, super simple and off the top of my head but still totally works out! The kids had seconds and then asked for thirds, that’s always a good sign. With strawberry season here, we are excited to go picking and come up with some new and tasty recipes just like this one! Hope you enjoy them too.

Strawberry Coconut Baked Donuts

Makes 8 donuts

Dry ingredients:

1/2 cup almond meal

1 cup whole wheat flour

2 tsp baking powder

1 tsp baking soda

pinch of salt

1/3 cup sugar

1/4 cup coconut, shredded (reserve a tablespoon or so to sprinkle on top of donuts)

Wet ingredients:

1/3 cup oil

1/2 cup milk (any variety, cow’s milk or plant based)

1 egg

1 tsp vanilla

1/3 - 1/2 cup strawberries, chopped

Directions:

  • Preheat oven to 350 degrees and grease donut baking tray

  • Combine dry ingredients in a small bowl and set aside

  • Combine wet ingredients in a larger bowl and stir in dry ingredients

  • Gently fold in strawberries

  • Gently spoon batter into donut mold or use a piping bag to fill the donut tray

  • Sprinkle shredded coconut on top of donuts

  • Bake for ~18 minutes or until a tester comes out clean
