Quick Cinnamon Buns

These cinnamon buns are great for when you want a cozy breakfast ready quickly. Unlike regular cinnamon buns, these are not made with yeast, so come together in less time. I wouldn’t say that these are a straight swap for traditional cinnamon buns but when you’re short on time and the craving hits, this quick recipe does the trick! Warm out of the oven with a dab of butter on top or a dollop of whipped cream and berries on the side are our favourite ways to serve these cinnamon buns. The kiddos like them for a weekend breakfast or after school snack. If you don’t have a ton of time to wait around for dough to rise, give these cinnamon buns a try.

Quick Cinnamon Buns

Makes 12

Wet Ingredients

3/4 cup Greek yogurt

1/3 cup buttermilk

2 tbsp butter, melted

Dry ingredients

2 1/4 cup whole wheat flour

1 tbsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1/4 cup granulated sugar

Filling

2 tbsp butter, melted

1/3 cup brown sugar

1 tbsp cinnamon

Directions:

  • Preheat oven to 400 degrees

  • Grease 9” springform pan

  • Combine wet ingredients in a large bowl

  • Combine dry ingredients in a small bowl and mix into wet ingredients

  • Combine brown sugar and cinnamon for filling, set aside

  • Once dough forms, turn out onto floured surface and roll out to 1/4” thick rectangle

  • Brush with melted butter and sprinkle brown sugar and cinnamon evenly on top

  • Roll into a log and cut into 12 rounds

  • Place in springform pan cut side up

  • Bake for 35-40 minutes or until golden brown
