Banana Raspberry Freeze
Frozen fruit whipped up to the texture of ice cream. Its genius isn’t it? The first time my mom saw me whipping up a batch for the kids she thought I was the most creative mom around, and told me that I had to share this one with the world. I told her that I wished it was my idea!
We are often drowning in a sea of overripe bananas here. We usually go through a lot so we buy two bunches each week. Some weeks they go and some weeks we have some very spotty ones left behind just begging to be made into a banana bread, muffins or popsicles. I peel overripe bananas and freeze them in packs of three, when I’m ready to bake or whip up a cold treat, they are ready to go.
To ensure that my kids don’t always put sugar laden sweet treats on a pedestal, we’ve decided to offer something sweet after dinner most nights. We like to switch it up and offer a lot of variety. Some nights we just do a plate of fruit and everyone can choose what they want, other nights its a s’more or mint chip ice cream IN A CONE (always a big deal!) or its a homemade treat such as a chocolate chip cookie, fruit crisp with whip cream, chocolate pudding or this raspberry banana freeze. By allowing my kids to enjoy these foods on a regular basis, they are less likely to overindulge when they are available or obsess over these foods and want them all the time.
Last week, I whipped up this up using frozen bananas and raspberries. That’s it, just two ingredients. It was a hit! Full of flavour, nutrition, refreshing and so quick and easy to throw together, even on a weeknight. We had a little bit leftover so I poured it into popsicle moulds and the kids enjoyed them for breakfast the next morning. This any time of day treat is so simple and the ingredient list so short, it seems silly to write up a “recipe” for it, but here it is anyway.
Banana Raspberry Freeze
Serves 4
Ingredients:
2 bananas, frozen
2 cups frozen raspberries
Directions:
Place raspberries and banana into food processor
Blend until smooth and thick ice cream texture has formed
Scoop into serving bowls, top with additional fruit, chocolate chips and nuts or colourful sprinkles
