Banana Blueberry Baked Oatmeal

This ‘one bowl’ recipe for baked oats is a great idea for breakfast.  Its quick and easy to throw together on the weekend and then serve up leftovers throughout the week.  It’s a great alternative to a regular bowl of oats or a muffin at breakfast time.  Delicious warmed up and smothered in nut or seed butter with sliced banana on top (my fave) or with a dollop of yogurt and fresh berries.  This version of baked oatmeal includes some cooked quinoa to bump up the protein content.  It also includes hemp seeds and chia seeds which add a little bit of omega 3 fatty acids.  Old fashioned rolled oats and fruit make this oatmeal bake high in fibre too.  The combination of these ingredients with their protein and fibre means this meal will keep you feeling full until lunch time.  Combine with some fruit and a glass of milk for breakfast and you’ve got a complete and satisfying meal.  Feel free to switch up the fruit combo using whatever you have on hand, applesauce in place of banana and other berries or sliced peaches folded in would taste great too!

Banana Blueberry Baked Oatmeal

Makes 6-9 servings

2 cups old fashioned rolled oats

½ cup quinoa, cooked

2 tsp baking powder

1 tsp cinnamon

¼ tsp salt

1 tbsp hemp seeds

1 tbsp chia seeds

1 ½ cups milk (cows milk or plant based milk alternative)

1 banana, mashed

1 egg

1/3 cup honey or maple syrup

3 tbsp canola oil

1 tsp vanilla

1 cup blueberries (fresh or frozen)

Directions:

  • Preheat oven to 350 degrees and grease 8x8” baking dish or line with parchment paper

  • Combine all dry ingredients in a bowl then add in all wet ingredients, except blueberries

  • Stir well to combine, gently fold in blueberries

  • Transfer to greased or lined baking dish

  • Bake for 40-45 minutes
