Wholegrain Lemon Blueberry Waffles

Waffles are made for weekends. The kids love waffles of any kind. They love how the little pockets hold melted butter and syrup for a blast of flavour with every bite. Full of bright flavour from the lemon and blueberries, these waffles never disappoint. They are a little ray of sunshine on a gloomy winter day. For breakfast, lunch or snack, these waffles will be a hit! I promise!

Wholegrain Lemon Blueberry Waffles

Makes 12

Dry ingredients

2 cups whole wheat flour

2 tsp baking powder

1 tsp baking soda

1/4 tsp salt

2 tbsp granulated sugar

2 tsp lemon zest

Wet ingredients

2 eggs

1 1/2 cups buttermilk

1/2 cup melted butter or oil

3/4 cup blueberries

Directions:

  • Preheat waffle iron

  • Combine dry ingredients in a small bowl and set aside

  • Combine wet ingredients in a larger bowl

  • Add dry ingredients to wet ingredients and stir to combine, careful not to over stir

  • Fold in blueberries

  • Using a 1/4 cup measuring cup, scoop up batter and pour onto waffle iron, close lid and wait until cooked

  • Serve waffles warm with butter and maple syrup
