Bran Muffins with Dates and Chocolate Chips
I know! Its another muffin recipe! I swear I make more than muffins in my kitchen. It’s just that we love them so much. These ones are an all time favourite. They are a spin off a Bran muffin my mom used to make us when we were kids. Simple ingredients, high in fibre and really delicious. You can pretty much add in whatever you like, berries, chopped apple, a grated carrot or zucchini or a mashed banana. In this version, I added in a few chopped dates and a few tablespoons of chocolate chips. Yet again, they were a hit. Great for breakfast or a quick, but filling snack. Serve with a fruit and some yogurt or cheese and you’ve got yourself a complete meal!
Bran Muffins with Dates and Chocolate Chips
Makes 12 muffins
Dry Ingredients
2 cup whole wheat flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 cup brown sugar
pinch of salt
2 Medjool dates, chopped
1/4 cup mini chocolate chips
1 cup Bran flakes cereal
Wet ingredients
1 1/4 cup buttermilk (or milk alternative with a 2 tbsp of vinegar or lemon juice added)
1/3 cup oil
1/4 cup applesauce or mashed banana
1 egg
Directions:
Preheat oven to 350 degrees and grease muffin tin
In a large bowl. combine Bran flake cereal with buttermilk and set aside to soak.
In a separate bowl, combine dry ingredients and set aside
Add remaining wet ingredients to the bowl of soaked Bran flake cereal and mix well
Add dry ingredients to wet and stir to combine
Fold in chopped dates and chocolate chips
Portion into muffin tin
Bake for 18-20 minutes or until a tester comes out clean
